![]() CHICKEN "NUGGETS" 2 chicken breasts - sliced into thin strips (then sliced into cubes if you wish) 1 egg or plain yogurt bread crumbs or crushed flaked cereal Scramble egg or spoon 4 tablespoons yogurt into a wide bowl. Dip the breasts strips into the egg or yogurt. Roll in the bread crumbs or cereal. Fry gently in pure olive oil (about 1-2 teaspoons) or Bake until golden at the temperature you normally bake at (375F is a good temp) Transfer to plate lined with paper towels, allow to cool and then wrap in foil or plastic wrap, then transfer to freezer. VIOLA, ready to eat chicken nuggets CHEDDAR & VEGGIE PANCAKES 2 carrots - 1/4 lb zucchini - 1/4 lb Grafton Cheddar - 6 oz potatoes 2 large eggs 1/4 cup bread crumbs 1/4 tsp salt dash of cayenne pepper vegetable oil Peel carrots and potatoes and grate them, along with zucchini and cheddar cheese into large bowl. Stir in eggs, bread crumbs, salt and pepper. Heat about 1/2" vegetable oil in a 10" skillet. Pour in 1/4 cup of batter. Press down with spatula and flatten. Cook until well browned on both sides. Cook as many pancakes at a time as will fit in pan without touching. As each pancake is done remove from pan and set on plate covered with paper towel to drain. Serve hot. Makes approximately 12 cakes. Freezes well! SWEET POTATO FRIES (These will not be of the same texture as "regular" french fries) Scrub sweet potatoes (approx 6 medium/large ones) clean and/ or peel them if baby cannot handle the skins. Cut into sizes that will suit your needs or, cut into strips that you may then cut down after baking In a large bowl, add about 1/4 cup of olive oil. To this you may add: cinnamon, ginger, a pinch of brown sugar, etc.. (we add cinnamon and sometimes a bit of brown sugar). Toss the cut up sweet potatoes into the bowl and stir so that the potatoes are drenched with the olive oil mix. Dump mixture onto a baking sheet, drizzle remaining olive oil over the potatoes on the baking sheet. Stir and swirl the potatoes on the baking sheet before placing in oven. Bake for approx 30-45minutes or until tender at 400F MEAT BALLS 1 pound ground turkey or ground beef bread crumbs wheat germ 1 egg spices such as garlic, pepper, basil, thyme and/or oregano Mix ground beef with approximately 1 cup of bread crumbs, 1/4 cup wheat germ, 1 egg and the spices you have chosen. Vary the measurements as you blend the ingredients, you may require more/less bread crumbs. Roll into balls, bake at 375F until golden or for about 25-30 minutes. Do not allow these to burn. Cover the pan with tin foil to help prevent burning if need be. Use a small baking pan so you may shake and roll the meatballs around - helps to keep even cooking . Cool, Wrap, Freeze! "FAST" VEGGIE PANCAKES Hodgson Mills Buckwheat Pancake Mix (Hodgson Mill Home) WE LOVE Hodgson Mills grain and mixes!! Grated carrots Grated zucchini Grated cheese (cheddar, jack, colby - your choice) Prepare buckwheat pancake mix as directed on the box and add 1/4 cup grated carrots and 1/4 cup grated zucchini Fry gently in olive oil until done. Freezes and warms well! You can also add ham, turkey, chicken and/or cheese! TODDLER "MC-MUFFIN" 12 eggs (yes, you can freeze cooked eggs!) 12 English muffins 12 slices of cheese (American or light cheddar) 12 turkey or 100% natural pork sausages (round) Fry the eggs individually (using a round pancake "cutter" will keep the egg shaped) Fry 3 at a time so that you can toast and prepare the English Muffins – butter toasted English Muffins and prepare with slice of cheese and sausage. Put the cheese over the sausage to help melting. Once eggs are fried, transfer egg to English Muffin on top of the cheese and sausage and close the sandwich. Repeat until you have 12 Toddler "McMuffins". Freeze and thaw before warming SWEET POTATO PANCAKES 2 tbsp unsalted butter, melted 1/2 cup cooked sweet potatoes, mashed 1 egg 1/3 cup all-purpose flour (use graham flour for a nice taste!) 1/2 tsp baking powder 1/4 cup milk (or more) Mix sweet potatoes in a mixing bowl with egg. Stir in the flour and add the baking powder. Add up to 1/3 cup of milk, stirring. Stir in 1 tbsp butter. The mixture should have the consistency of thick, lumpy sauce like an "instant" pancake mix Place a non-stick or heavy iron skillet over medium heat on top of the stove and add 1/2 tsp butter. Spoon batter into the skillet and cook until bubbles rise to the surface of the pancakes and break. Approx. 1 to 2 minutes. Using a spatula, flip the pancakes and cook another 2 minutes. Remove pancakes from the skillet and keep warm on a covered plate in the oven. Freezes Well! SWEET POTATO "PANCAKES" 1 cup basmati rice - 1 1/2 pounds of Sweet Potato (orange not white ones!) 3/4 cup frozen baby peas - 3/4 cup zucchini 1/3 cup fresh breadcrumbs - 1 tablespoon ground cumin 1 garlic clove - 1 egg 2 tablespoons fresh flat leaf parsley salt & freshly ground black pepper olive oil Cook the rice in a large saucepan of water (typically 2 cups of water per 1 cup rice) Chop & steam or boil the sweet potato until tender, drain well. Mash until almost smooth. Cut the zucchini into small dices - add zucchini and all other ingredients to mashed sweet potato and mix well, season with salt & pepper if desired. Divide the mixture into equal portions and cook in lightly oiled frying pan for approx. 3 minutes each side, Drain on paper towel. Great warm or cold! Please note: It is important that you ensure your Toddler is sitting upright when eating any and all foods. Do not let your Toddler run around while eating any food! Pay close attention to size of the foods that you offer your Toddler and be cautious of any foods you feel might pose a choking hazard for your Toddler. For example, there are some Toddlers that may be able to eat grapes cut into pieces while other Toddlers might not. Only you know your Toddler and his/her abilities to handle different foods of differing sizes and proportions! OOPS! Toddler Recipes Ages 1 and up! Breakfast Sundae From Recipe Goldmine Ingredients: 1 tablespoon strawberry jam 1/2 cup Cheerios 1/2 cup strawberry flavored yogurt 3 whole fresh strawberries Directions: Wash strawberries and remove stems. Place 1 tablespoon strawberry jam in bottom of glass. Put 1/4 cup Cheerios on top of jam. Slice 1 strawberry and place on top of Cheerios. Put 1/4 cup yogurt over strawberries. Add remaining layer of Cheerios. Slice another strawberry and place on top. Add remaining yogurt; top with whole strawberry. Breakfast Tacos From Recipe Goldmine. Ingredients: 6 flour tortillas 8 eggs 2 tablespoons milk 6 bacon slices, cooked and crumbled 1 cup shredded Cheddar cheese Directions: In a medium size microwave-safe bowl, mix together well eggs and milk; cover bowl with paper towel. Microwave on HIGH for 3-4 minutes, stirring once after 2 minutes, or until cooked and fluffy. Heat tortillas as directed on the package. Spoon warm eggs onto each tortilla. Top with crumbled bacon and shredded cheese. Fold the tortilla. Banana Pancakes with Maple Syrup by Tamilyn Ingredients: 1 small banana 1/2 cup Pancake mix (prepared as directed on box) 1 tbsp maple syrup Pat of Butter Directions: Prepare pancakes as directed on box. In the meantime, sauté the bananas and syrup in a small skillet. Make small silver dollar pancakes. Cut cantaloupe in half (length-wise or width-wise) and reserve the rind shells for later use as bowls. Scoop out seeds. Use melon baller to scoop out balls. Return melon balls to shell bowls with to cup plain yogurt for each bowl. Serve immediately for maximum taste and nutrients. Kids will love the natural bowls. If the bowls are rolling around and unstable, cut a slice off the bottom to make them flatter. Variations: Pineapple, honeydew melon, or papaya can be used instead of cantaloupe. Sprinkle ground or chopped nuts on top, or add a squirt of lemon or orange juice. Kiwi Health Cereal Dice or mash a kiwi with fork. Add cottage cheese, wheat germ, and a little maple syrup. Add a pinch or two of brewer's yeast (whose bitter flavor will be hidden by the sweetness of the kiwi and syrup) for an extra nutritional punch. Remember that vitamin C and iron work together. There is vitamin C in the kiwi and iron in the wheat germ. Variations: Instead of kiwi, you can use banana; instead of cottage cheese, you can use yogurt. Toddler Recipes Ages 1 and up! remember any of these recipes can be altered Tuna on Toast Courtesy of Recipe Goldmine For 12 months and older. Ingredients: 1 tablespoon butter 1/8 cup finely diced onions or chives 1 cup finely diced celery 1 (170g) can solid white tuna, drained 1/3 cup enriched white flour 2 cups homogenized milk 1/2 teaspoon garlic salt 1/2 teaspoon celery salt 1 teaspoon onion powder 1 tablespoon dill weed 5 slices whole wheat or multigrain bread, toasted (2 adults, 1 infant servings) Directions: In saucepan, over medium heat, cook onions and celery in butter until tender. Whisk flour into cold milk in small bowl then add to saucepan. Reduce heat to low, stirring occasionally. Drain tuna, break up into tiny flakes and add to saucepan. Add remaining ingredients, while stirring occasionally to avoid lumps. Toast bread. For adults, layer sauce over toast, and repeat. Salt and pepper may want to be added. For babies, serve like a stew, with toast fingers or cubes . Grilled Ranch Bread From Recipe Goldmine. Ingredients: 1 stick ( 1/2 cup) butter or margarine 1 packet (1 ounce) Hidden Valley Ranch Original Ranch Salad Dressing and Recipe Mix 2 (1 pound) loaves French bread, cut in half lengthwise Directions: Cream butter with ranch dressing mix. Spread mixture on bread. Place bread under broiler 2-3 minutes until golden brown. Makes 32 servings. Tip: This recipe may be cut in half, reserving half of the butter mixture for use at another time. Melon Ball Soup Tamilyn's Own Recipe This soup will be a hit with your toddler! Ingredients: 1 Cantaloupe 1 Honey Dew Melon Directions: Cut cantaloupe and melon in half. Scoop out seeds. With a melon baller, make small honey dew melon balls and small cantaloupe balls using 1/2 of the melons. Cut out remaining melons and put both Honey Dew and Canteloupe in blender or food processor and puree until you get a soupy mixture. Pour "soup" in bowl and place a couple of Honey Dew Melon Balls and Cantaloupe Balls in soup and serve. Freeze remaining puree in ice cube trays and put the remaining melon balls in zip lock bags and freeze. Makes 12-24 cubes. Caterpiller Cocoons ~ this could be for breakfast too From Recipe Goldmine. Ingredients: 1 (8 ounce) tube refrigerated crescent rolls 8 breakfast sausages 1 squeeze bottle yellow mustard Directions: Heat oven according to directions on the crescent-roll package. Prepare the sausages according to the directions on the package. Remove from frying pan and allow to cool for 10 to 15 minutes. Separate the crescent-roll dough into its pre-cut triangle pieces, and lay them flat on an ungreased cookie sheet. Place one sausage on each, squeeze a thin line of mustard on each. Roll and close all ends. Bake according to package instructions. http://www.myhomemadebabyfood.com/ Baked French Fries Don't deep fry potatoes in all that oil--bake them for your toddler instead! Cut up 2 or 3 potatoes into quarters, eighths, or French fry shapes. You can peel them if you wish, but remember that the peels have lots of nutrients. Put the cut-up potatoes in a bowl and toss them with melted butter. Use only about 1 teaspoon of melted butter for each potato. (Or save washing a big bowl and brush them with melted butter instead.) Spread potatoes on a cookie sheet sprayed with non-stick cooking spray. Bake in pre-heated 400 oven for 20 minutes or until browned. Variations: Sprinkle some Parmesan cheese and/or parsley on those fries before they go into the oven--delicious! Sauté broccoli, carrots, zucchini in olive oil until crisp yet tender. Drain & rinse pasta. Combine pasta and vegetables in large bowl and add parmesan cheese to lightly coat. Add black pepper and lemon juice if you wish. Serve warm or cold PINWHEEL PLATTER Cheese Slices Veggie and Fruit sticks or slices Turkey, Chicken Breast or other Meat Slices ** NATURAL ONLY - CHECK FOR PRESERVATIVES** Lay meat slices on plate, top with cheese slices and roll into a tube. Cut the "tube" into separate portions. If appropriate, use colourful toothpicks to hold the "pinwheel" slices together. Your toddler will have fun eating the portions from the toothpicks (you may even lay these out if find them inappropriate!) as if on an hors de vours tray! Add sliced veggies and fruits to your pinwheel platter for colour and variety to tempt the toddler palate! CHICKEN POTATO CHOWDER 1/3 C. diced and cooked boneless breast or ground chicken 1/4 C. cubed and cooked potato 3 T. shredded mild Cheddar or American cheese 1/4 C. milk 2 tsp. butter Peas, carrots and/or corn Mix chicken, veggies, potato, milk, and butter in a small saucepan. Simmer over low heat for 10 minutes. Stir in cheese. Serve warm. CHEESE MELTS Top a slice of bread, open pita or flour tortilla with the following: 2 tomato slices Strips of cooked thinly sliced chicken, natural ham, beef or ground turkey sausages, (you may also use tuna fish if your toddler may have fish). Top off with a slice of cheese (deli style "real" cheese). Hide some veggies like cooked Broccoli, Carrot Slivers, Onions, Peppers, even Green Beans for example! Broil in oven or toaster oven until cheese is melted. Allow to cool prior to serving NANA'S CREAMED PEAS & NUGGETS 4 cups peas, fresh, frozen (or canned as a last resort) 1 cup milk 2 tablespoons flour 2 tablespoons butter salt and pepper to taste pieces of chicken, fish, pork or beef Melt butter in a large sauce pan and whisk in flour- allow to cook for 1 minute. Slowly add milk, whisking to prevent lumps. Add salt, pepper and other spices as desired. Cook until sauce begins to thicken. Add peas, stir and cook until peas are heated through (about 5-7 minutes) Add meat Serve warm alone or over multi-grain toast. **Other veggies may be added if you desire, however - ensure that ratio of veggies equals 4 cups!** PUPS IN A BLANKET One pack of all-beef, or turkey all-natural (or tofu) hot dogs Puff pastry dough or Ready-to-Bake Crescent Rolls or Lavash or Wraps Veggies & Cheese Directions: In a skillet, cook the (tofu) dogs until they brown and blister- may boil if using meat dogs, while the dough sits out defrosting. Wrap the dogs in a square of the dough and roll them up like a cigar with veggies & cheese. Cut into smaller pieces to desired Toddler-friendly size. In an oven preheated to 375-400 degrees F, bake the rolled dogs for about 25min. or until they are fluffy and golden brown. Serve with Sweet Potato Fries or Veggie Sticks and Dipping Sauce TOFU NUGGETS 1 package firm tofu - 1/4 cup flour (more or less) 1 egg equivalent (2 whites or your favorite sub) 1 cup fine dry bread or cracker crumbs (mixtures are fun) 1 teaspoon garlic salt - 1 teaspoon paprika - 1 dash or a few grinds of pepper Cut tofu into your favorite configuration (my toddler likes fingers). Spread flour on a small plate or flat dish. Beat egg equivalent in a shallow dish. Mix remaining ingredients in shallow dish. Turn each piece of tofu in the flour to cover, then into the egg, then crumbs, and then to the rack. Chilling will help to set the coating, but you can just bake right away. Bake at 350 degrees F for 15-20 minutes until crisp. Serve with a dipping sauce PEANUT BUTTER & BANANA GRILLED SANDWICH **See below for a Note concerning Peanuts and Tree Nuts Warm frying pan Lightly butter 2 slices of whole grain bread When frying pan has warmed, lay one slice of bread butter-side down and spread with peanut butter and thinly sliced bananas Top with remaining slice of bread; butter side up. Fry and flip sandwich as needed until bread becomes golden and toasted. *After One (1) Year for the Non Food Sensitive/Non-Allergic Child; *After Two (2) or Three (3) Years for the Food Sensitive/Allergic Child. "TRADITIONAL" GRILLED CHEESE Warm frying pan and take out 2 slices of cheese from the fridge Lightly butter 2 slices of whole grain bread When frying pan has warmed, lay one slice of bread butter-side down top with 2 slices of cheese and then top with remaining slice of bread; butter side up. Fry and flip sandwich as needed until bread becomes golden and toasted. Hide meat and/or veggies in there!! Turkey, Chicken, Cooked Broccoli, Carrot Slivers, Onions, Peppers, Tomatoes or even Green Beans for example! QUICK CHEESY VEGGIE QUESADILLA 1 flour tortilla 2 slices of cheese chopped cooked veggies On the tortilla, spread out the veggies then cover with cheese slices Bake or broil until cheese has melted If broiling, watch carefully as cheese may burn quickly! STUFFED PITAS - The greatest for travel as they act like a plate/bowl! 1 whole grain or oat bran pita pocket Stuffing such as: cheese, turkey, chicken, peanut butter-n-jelly, hummus, veggies Cut off one "top" portion of the pita to enable opening Stuff pita with your choice of ingredients Warm in toaster oven or microwave if desired (when melting cheesy-veggie pita for example) Serve with fruit slices, yogurt and drink |

DINNER IDEAS
Toddler Recipes Ages 1 and up! Dogs in a Sweater From Recipe Goldmine. Ingredients: 1 (11 ounce) package refrigerated breadstick dough 8 hot dogs 8 Popsicle sticks Catsup, mustard and/or ranch dressing Directions: Separate dough; roll each piece into a 15-inch rope. Insert sticks into hot dogs lengthwise. Starting at one end, wrap dough in a spiral around hot dog; pinch ends to seal. Place 1 inch apart on a baking sheet that has been coated with nonstick cooking spray. Bake at 350 degrees F for 18 to 20 minutes. Serve with toppings of your choice. Toad in a Hole From Recipe Goldmine. This could be breakfast too!! Ingredients: 1 slice bread Butter 1 egg Salt and pepper, to taste Directions: Cut out center of bread slice with a round biscuit cutter. Butter bread generously on both sides. Brown bread on one side in moderately hot buttered frying pan. Turn over. Break egg into hole in center of bread. Cook slowly until egg white is set (cover pan until white starts to set). Sprinkle lightly with salt and pepper. Lift out with pancake turner and serve. Makes 1 serving. ( yummy)!! Pizza Sticks From Recipe Goldmine. Ingredients: 1 (11 ounce) package refrigerated bread sticks Pepperoni, pre-sliced Shredded mozzarella cheese 1 tablespoon parmesan cheese 1 tablespoon Italian seasoning 1 garlic powder Pizza sauce Directions: Heat oven to 350 degrees F. Roll out bread sticks on an ungreased cookie sheet. Lay two pepperoni slices on the end and sprinkle with some mozzarella cheese. Fold bread stick over and twist. Mix together parmesan, Italian seasoning, garlic powder and sprinkle over top of twisted bread stick. Add more mozzarella if desired and bake for 5-8 minutes or golden brown. Dip in warmed pizza sauce to eat. Hot Dog Spaghetti Casserole From Recipe Goldmine. Ingredients: 1 pound spaghetti 1 jar spaghetti sauce 1 package hot dogs, sliced into rounds American cheese slices or shredded cheese Directions: Preheat oven to 350 degrees F. Cook spaghetti as directed on package; rinse and drain. Butter a casserole dish or pan. Layer spaghetti, sauce, hot dog slices, more sauce, and top with cheese slices or shredded cheese. Bake about 30 minutes or until casserole is bubbly and the cheese is melted. Macaroni and Cheese with Tomatoes From Recipe Goldmine. Ingredients: 2 cups macaroni 2 tomatoes 2 tablespoons butter 1/2 pint milk 1 heaping tablespoon flour 1/2 teaspoon salt Pinch of pepper 1/4 teaspoon dried mustard 2 cups grated cheese Directions: Cook macaroni. Slice tomatoes. Whisk flour and milk together in a bowl. Melt butter in a saucepan. Add milk and flour mix. Bring to boil, then simmer for 2-3 minutes. Season with salt, pepper, mustard and half the cheese. Add macaroni and mix well. Pour mixture into pie dish. Top with layer of tomatoes and rest of cheese. Put in warm oven until cheese is toasted. Hedgehogs ( these could be really any shape) From Recipe Goldmine. Ingredients: 1 pound ground beef 1/2 cup uncooked rice 1/4 cup chopped onion Pepper Salt 1 can tomato soup 1/2 can water 1 teaspoon Worcestershire sauce Directions: Mix beef, onion, salt and pepper together. Make 8 hedgehog shapes from mixture. Arrange in a greased casserole dish. Mix soup water and sauce together. Poor over the hedgehogs. Cover casserole with lid. Grazin' Foods for your Toddler
I DO this The Glorious Divided Dish (or the Mighty Muffin Tin) 1 divided dish, divided plastic storage container or muffin tin diced fruits or diced veggies yogurt dip pita chips or toast points Fill the compartments of your divided dish/container or muffin tin with the above ingredients and leave out on the table- ensure this is in easy reachable access to Toddlers. Rice Cake Fiesta - Rice cakes are great grazin' foods and they are available in whole grain, unsalted versions too! Prepare rice cakes with your Toddler's favorite spread or dip. Grate an apple, carrot and/or other fruits and veggies over the rice cake. Colour and taste to tempt the Toddler to slow down and refuel! Cracker Smackers Whole grain crackers - unsalted Toddler's favorite spread or dip 1 grape or 2 raisins or 2 Cheerios or 1 cube of cheese Spread dip or spread on the crackers and top a cracker with 1 grape, another cracker with 2 raisins, another cracker with 2 Cheerios and yet another cracker with 1 cube of cheese. Make as many of these as you feel your Toddler will eat. It's the variety that will catch her eye and tempt her to at least nibble each cracker. Cottage Cheese Dippers Cottage Cheese Fruit Dices Whole Grain Bread Sticks or Toasted Pita Chips Blend cottage cheese with dices of peaches, dices of pears or blueberries in a small dish. Arrange cottage cheese blend on a larger dish and ring with bread sticks or pita chips. Place the arrangement in a larger bowl that is filled 1/4 of the way with ice cubes. Have your Toddler help with the ice cubes and tell him how the ice cubes will change when the Grazin snack is ready to be put away. This will keep outside the fridge for approx. 1 hour. When you clean up, talk to our Toddler about how the ice has melted and turned back into water. Science and grazing together! |

Baby Meatloaf INGREDIENTS: · 4 ounces ground beef or ground turkey · 1/2 cup any assorted fresh vegetables, grated or chopped very fine (carrots, green beans, peas, mushrooms) · 1 egg · 1/2 cup bread crumbs or crushed cereal such as unsweetened flake cereal (corn or wheat flakes are good) · Catsup (optional) PREPARATION: Mix ground beef or ground turkey with grated vegetables, egg, and bread crumbs with your hands until they are well combined. Cinnamon Delight • Spead a slice of toasted whole grain bread with applesauce and sprinkle with a little cinnamon Fruit Shake ~ Blend together • ľ cup (200 ml) plain yogurt • ľ cup (200 ml) drained pineapple chunks • 2 Tbsp. (30 ml) frozen orange juice concentrate Cheesy Delicious Toast • Mix cottage cheese or ricotta cheese with a little cinnamon and vanilla. Spread on bread or toast. Broil in oven until it bubbles Veggie Dip ~ Mix together • 1 cup (250 ml) yogurt • 1/3 cup (75 ml) mayonnaise • 1 Tbsp. (15 ml) of finely chopped onion • 1 Tbsp. (15 ml) of finely chopped parsley • 1 tsp. (5 ml) of dill Season and salt to taste. Serve with raw vegetables Tropical Buttermilk Suprise • Blend buttermilk with crushed pineapple and add a bit of cinnamon Yummy Humms ~ In a blender, puree 19 oz can of (540 ml) chick peas. Add and blend between each addition. • Ľ cup (50 ml) of tahini • Ľ cup (50 ml) lemon juice • Ľ cup (50 ml) of plain yogurt • Ľ cup (50 ml) of olive oil • ˝ tsp (2 ml) ground cumin Salt and pepper to taste Add ˝ chopped onion, 2 garlic cloves and puree until smooth. Serve with pita bread or raw vegetables |

4g's sugars on a food label = 1 tsp of sugar, so for a 12g yogurt it has 1 tbsp of sugar!!
you can buy plain yogurt and add your own sugar to it, you know its always going to be less doing it yourself there is nothing wrong with adding it if you choose |

Broccoli Quiche
4 oz sliced mozzerella cheese onion finely chopped (use to your discretion) 1 pkg broccoli spears (i used broccoli/cauliflower mix)cooked 1 cup milk 4 eggs 5 tbsp flour In 9x9 pan (spray with pam or grease) place 1st 3 ingredients in order listed. Mix Egg, milk and flour until blended. Pour over ingredients already in pan. Bake 25-30 min. at 400 until golden and firm. makes 4 servings (8 servings for abby) enjoy!

I just omited the blueberries and also made cinnamon apple and banana too. I'm sure you could do any fruit. Oatmeal and Wheat Flour Blueberry Pancakes INGREDIENTS: 1/2 cup whole wheat flour 1/2 cup all-purpose flour 2 tablespoons brown sugar 2 tablespoons baking powder 3/4 teaspoon salt 1 1/2 cups quick cooking oats 2 cups buttermilk 3 eggs, beaten 1/4 cup olive oil 1/2 cup frozen blueberries DIRECTIONS: 1. Preheat a lightly oiled griddle over medium heat. 2. In a large bowl, mix whole wheat flour, all-purpose flour, brown sugar, baking powder, and salt. 3. In a small bowl, mix oats and buttermilk. Whisk in eggs and olive oil. Pour into the flour mixture all at once. Continue mixing until smooth. Gently fold in blueberries. 4. Pour batter about 1/4 cup at a time onto the prepared griddle. Cook 1 to 2 minutes, until bubbly. Flip, and continue cooking until lightly browned. |

Butternut Mac-n-Cheese 1 medium buternut squash or 2 cups of mashed anc cooked butternut squash Macaroni of your choice (our toddlers LOVE the tri-colored "wheels") To make the Cheese Sauce: Make a roux! The roux is the basis for many cheese sauces and gravies! Use equal parts butter and flour - milk as needed to achieve the saucy texture you desire - cheese as needed but not too much to make the sauce thick. In medium saucepan, melt butter and stir in flour to make a thinnish paste. Cook 1 to 2 minutes, stirring constantly, then whisk in milk a little at a time to make a white sauce. Bring to a boil, then reduce heat and simmer. Remove pan from heat and stir in cheese or keep pot on low heat and stir constantly until cheese is melted and a cheesy sauce is attained. Add pasta.
When we make it for the family, we use the following: 2 tablespoons butter 2 tablespoons flour 1 to 1 1/2 cups milk 4 to 8 ounces of cheese (Cheddar, Jack and Colby together are very good!) Cheese Sauce for Mac n Cheese is really an experimental thing! When Macaroni is done cooking and you have made the cheese sauce, combine and mix well. Add the butternut squash and mix again. Add the mix to a greased 2-1/2-qt. baking dish, Sprinkle with shredded cheddar and breadcrumbs if desired Cover and bake at 325 degrees for 20 minutes

1 package of Vanilla Instant pudding 2 cups of pasteurized Egg Nog (the regular kind, not the new flavored versions!) Empty pudding packet into a bowl then add the 2 cups of cold Egg Nog. Whisk until the mix becomes a bit thick. Pour pudding into 1/2 cup servings and allow to set and cool for an hour or more. Serve with a dash of cinnamon and nutgmeg and for an extra treat, a big squeeze of whipped cream!

Quick Pumpkin Pancakes Hodgson Mills Buckwheat Pancake Mix (scroll down to see the box) 1 C pureed pumpkin or winter squash 1 tsp vanilla dash cinnamon and ginger handful of raisins (optional but we love to add raisins!) Prepare and cook buckwheat pancake mix according to package directions
You will be substituting the milk or oil with the pumpkin puree, follow the directions for the applesauce buckwheat pancakes. These freeze beautifully! If you have never made buckwheat pancakes, you will notice that these pancakes are more heavy and dense than other pancakes
