I KNOW I'm having mexican food tonight. We have it almost every night, except the weekends. Last night we had chicken flautas with an awesome salsa. Tonight, i'm hoping for albondigas, which are mexican meatballs in a yummy sauce.

Oh, and eating mexican every night really does make you fat. I try really hard to portion everything, but there's so much hidden oil in everything. I've gained 5 pounds since last april just from eating this food.

Wendy - That sounds REALLY familiar. Dont they have more then one location too?

Regina - Theres tons of locations, especially in San Jose. Theres also one in Gilroy, Morgan Hill, Hollister, Watsonville, and Ventura I believe, too. Whats best is you can either eat there or take it to go and its not even expensive!

If you are ever in the Watsonville area, go eat at "Cilantros" - Awesome mexican food!

Emily - My MIL makes albondiagas ALOT, I love her Posole the most, its so good! And you're right, it does make you fat! All those tortillas, pan dulce, tres leche cake, mm!

Cristina~ I don't know what Posole is, but I know I have an aunt who makes it. I'm half mexican and don't even know half of the things you guys are talking about I just know I love mexican food I'll have to try Super Taqueria and Cilantros. Thanks! Maybe I'll go meet DH at his work and he can take me out one day soon.

Pozole is a soup, which I love too! It's made with hominy (which is like dried puffed-up corn) and pulled pork and mild chiles and spices. And then garnish with onions and cilantro and lime, and eaten with tostadas! Yum!! I hope we have that on Saturday!

It sounds like menudo without the tripe. I might like posole, but will not touch menudo with a 10 foot pole. Who knows, I may have had posole and not even know it. My grandma used to make me eat menudo before I knew what it was

Cristina - Yeah they have several locations, and what's funny is there are 2 right across the street from each other in Los Gatos. I think they have other locations, too. I dont remember where they are though.

Emily - I love chicken flautas! Especially the one's at Chevy's with the chipotle sauce and jalapeno jelly. (I think the restaurant may be called something else on the east coast). You are so right about it making a person fat, too. I guess if you don't eat all the cheese and creamy stuff and really watch your portions it's okay, but how the heck is a person to do that?

Dh took me out for cheese enchiladas last night and I ordered a side of avocado slices, too. So yummy! I think i may have to go to Chevy's tonight for chicken flautas!

This is embarrassing, but funny. Dh teases me about our baby being Mexican (not seriously). Because it was right after our pool was completed that I got pg (and during that time there were 3-4 Mexican guys here everyday for 3 months straight). Then we were trying to call the guy that did the start up on our pool (who happens to be white) and the number I gave Dh was wrong somehow and some guy named Carlos answered the phone. So of course, (with me) he's all "oh ... Carlos, huh?" Then he mimics that cell phone company commercial that the guy is on the phone with his girlfriend and he's asking/telling her that he's the only one in her life as the phone goes dead - and says to me "Carlos got your tongue?" And now with me craving Mexican food all the time it's just too funny. I have always loved Mexican food, though, and so does Dh, so I don't know what he's talking about .

I used to work with a lady and she told me how to make meatball soup. I think she said it was a family recipe - she was of Mexican ancestry but her family has been here for decades (she didn't even speak Spanish i don't think). Anyway, it was so good and easy, too! Oh, the point of that was that i think that the soup is mexican food, too. someday when I'm able to cook again i will have to dig up that recipe and make it for Dh.

LOL Wendy, your DH is funny.

Have you seen the commerical where the guy gets his friend cell phone and asks why his girlfriend is in his top 5? And when the friend says they are just friends, the girlfriend calls and her specific ringtone is "Secret Lovers".

LOL Cristina - Yeah I LOVE that one! So funny!

Regina and Emily - That pozole soup sounds good, but i agree there is no way I would eat menudo.

Sorry Betsy . I'm just sitting here all day hungry with no food in the house and I can't go anywhere (long story) so all I can think of is food . Nutrisystem has tacos, though! I'm sure you can make something really yummy with them. I never even ate my NS tacos because they looked too plain and my food creativity is slightly lacking these past few years.

Regina I won't eat menudo either. Yuck. Pozole is WAYYYY different. Menudo has all that tripe and feet and is super oily and has too much oregano for my taste. I can't even smell it without wanting to puke. Or think about the smell of it. When I get pg again I will tell DH the smell makes me sick and he won't be able to have it in the house.

No meatballs tonight. It looks like some kind of beef with a mole sauce. Sometimes it's better when I can't identify what the cooking lady makes us.

Emily - Im curious if this is unheard of but have you ever heard of people adding Cola into the Mole? My MIL adds it all the time and she says it gives it a kick. I personally dont like Mole but I thought it was a weird touch.

Cristina~ I made a glazed ham last week in the crock pot that called for coka cola. It turned out nasty so I threw it away.

My aunt that's in the hospital put peanut butter in her mole. It was so good. I wish I would have gotten that recipe from her. Too late now.

Nah, didn't make it, I walked right across the street and got it.

It has guayaba, pear, dates, cherries and the cheesy looking stuff is like a powdered sugar type thing.
