I always double this recipe, but here is the original version

1 1/2 lbs ground chuck (approx) i use ground turkey (1.25lbs and 2.5 when i double it)
1 lg onion chopped

1 tsp cocoa powder
1 tsp oregano
2 tbsp corn meal

in large pot cook beef, onions, garlic, salt and pepper til meat has browned. add chili powder, cocoa and oregano, mix well (do not drain)
add corn meal and corn starch, mix well
add tomatoes and beans (do not drain cans) stir and simmer 1 hr. (i simmer 1/2 hr).

make sure to put the ingredients in in the order they are listed. it turns out tasting different if you don't. (i've done it!). the nice thing too with this recipe is once you buy the seasonings (corn meal, corn starch) the next time you want to make it all you have to buy is tomatoes, meat, and beans.

Ginger-Scented Apple-Squash Soup

Cooking Time: 90 min
Level of Difficulty: Moderate
This soup highlights some of fall's best ingredients: fresh apples and sugar-sweet squash. It's delicious made with pears instead of apples, too.






Ingredients
  • 1 1/2 Tbsp ginger root, grated
  • 1 medium leek(s), white part only, coarsely chopped
  • 4 3/4 oz frozen apple juice concentrate (undiluted), about 1/2 cup
  • 3 large apple(s), Golden Delicious, peeled, cored and cut into eighths
  • 3 pound butternut squash, peeled, seeded, cut in chunks (about 1 large squash)*
  • 4 cup canned chicken broth, divided
  • 1/2 tsp table salt
  • 1/2 tsp black pepper
  • 1/2 cup fat-free half and half
Instructions
  • Combine ginger, leek and apple juice concentrate in a large pot; cover and simmer until leeks are tender, about 10 minutes. Add apples, squash and 1 cup of broth; cover and simmer until very tender, about 1 hour.
  • Purée soup in pot using a hand-held immersion blender. Or purée soup in a blender in small batches (be careful not to splatter hot liquid) and return puréed soup to pot.
  • Add remaining 3 cups of broth, salt and pepper; simmer until heated through, about 10 minutes. Stir in half and half and serve. Yields about 1 cup per serving.
Notes
  • *Partially cooking a hard-shell squash makes it easier to peel. Pierce the gourd in several places with a fork, microwave on HIGH for 6 to 10 minutes, depending on size, and then peel.

i use ground turkey and it's 7 pts for 1 1/2 cups. very filling! i think it's 8pts with ground beef.

I made this Salmon recipe last night. I used canned diced tomatoes instead of cutting up a tomato. It was SO delicious. My mom and I ate it with saffron rice. The salmon recipe is only 4 points. If you love fish, you will love this.

Baked Salmon with Tomatoes, Spinach & Mushrooms

I made the macaroni with ground beef that Lauren posted. It was also good and very filling. Instead of using regular cheddar I used Chipotle (sp?) Cheddar and it gave it a nice kick.

christie - i'm so glad to know you are making some of the recipes i'm posting glad you like them! mmm..that cheese would be good with it. instead of plain diced tomatoes i use the diced tomatoes with oregano, basil and garlic. also gives a different flavor

that salmon recipe sounds really good too!

I just made this tonight...OMG was it good!!!! and super easy

i bought diced tomatoes that were flavored with balsamic vinegar, basil and oregano and omited the dressing...

Ok, WW girls. I'm interested in WW, but don't know if I want to spend all of the $$ to join. How do you know how many points you can eat and all that? And for those of you who HAVE joined and who pay, do you really think it is worth it? I'd love to hear what everyone thinks. TIA!

Hi all, so i'm new to this thread, but not the site. I was actually thrilled to sign in today and see this thread here bc I haven't had much luck with the entire TCC thing so far and I miss not having something to come read and post. So I just joined WW this week and I've been looking for interesting, low point things to eat... so glad to see all of your reciepes

Jenna, I actually just joined WW this week... I went to the first meeting and it kinda felt like watching a movie where they play a scene from an AA meeting or something, only for a good reason. I was suprised at how packed it was in there. I am going to continue going for a few more weeks, but with having such a shy personality, I doubt i'll ever say anything. They did give a few great reciepes that I came right home and made. My only gripe is that i'm still feeling hungry everyday, but I almost think that its just a conscious feeling bc i'm thinking of food so much and of everything that I ingest, whereas before I never really cared, I just ate To find your points value is very simple, I could scan and e-mail you the conversions if you'd like, however I would almost suggest going for atleast one mtg just to get all of the literature that they offer you. (They gve me this nifty converter that I have been taking shopping with me so that you know exactly how many points things are before you buy them and get them home) I know right now the reg fee is being waived, and it's only 12 per week. Hope this helps...

Thanks, Ashley. I think I've decided to at least check it out. As sad as this sounds, I honestly don't have an extra $12 a week right now, with going part time and my husband losing his over time.....I can spend $12 a week on diapers, or wipes, or formula or something, kwim? But thanks for your input. I really appreciate it!
