going to cook this tonight...(well I am planning to)

Recipes
Penne Shrimp Alfredo




Estimated POINTSŪ Values Per Serving | 6
Servings | 6

Main Meals | Community built RECIPE




Ingredients


6 oz. penne pasta
1/2 cup finely diced onion
1 Tbs. minced fresh garlic(or to taste)
2 Tbs. all pourpose flour
2 cup 1% milk
3/4 cup grated parmesian cheese
1 lb. peeled shrimp
1 tsp. oregano
salt and pepper to taste

Instructions


Cook pasta according to package directions. Rinse and set aside

Saute onion and garlic in smart balance spread until golden brown.

Sprinkle flour over onions and garlic and stir till flour is combined and lump free.

Add milk all at once and wisk into flour vegetable mixture until smooth.

Continue to cook, stiring frequently, over medium heat until mixture starts to bubble and thicken.

Add shrimp, parmesian, and spices. Stir and simmer another 3 to 5 minutes until shrimp are cooked through and cheese is melted.

Add cooked pasta and stir till combined.



Special Notes


Add a crisp green salad and a Pilsbury heart healthy roll (1 point) and this makes a very satisfying meal. You can also substitute cubed lean ham or cooked, shredded chicken for the shrimp .

Yum Yum Cassie that sounds good , I know you didnt ask me, but I think its 2 pts? I also think lauren has made it for 0 pts too before?

tammy - sorry, i wasn't ignoring you..i just saw this..LOL

i posted this recipe in the toddler recipes, but it's really an adult recipe so i'll post it here too

Broccoli Quiche

4 oz sliced mozzarella cheese
4-8 oz mushrooms (i leave these out)
1 large onion diced
1 pkg frozen broccoli (i use broccoli/cauliflower mix) cooked
1 cup milk
4 eggs
5 tbsp flour

In 9x9 pan (greased), place first 4 ingredients in order listed. Mix milk, eggs and flour well and pour over ingredients in pan. Bake 25-30 min at 400 or until golden and firm.

4 servings - 4pts each

(you could also substitute pretty much anything in this. meats, veggies, etc. pts would change but probably not by much)

Bruschetta Chicken Bake

6pts i'm pretty sure for a serving. should give the servings and nutrition on the link. i use low fat cheese tho instead. and diced tomatoes with italian flavoring instead of plain diced canned tomatoes. gives more flavor

tammy - my dh isn't a fan either. i just get petite diced tomatoes and he doesn't mind them. mixed with the stuffing you can't really taste tomato..just seasoning
