another snack that i have at night is popcorn. i buy the smart pop 98% fat free movie theater butter flavor (i think it's Orvill Redenbacher) it's 2 pts for a bag. sometimes i melt a little extra of my 0 pt butter and put some salt on it

also, southbeach pizza's are really good. the deluxe is 7pts and i think it tastes a lot better than lean cuisine's pizzas. i know that south beach is low carb, but there's so much fiber in them that it makes them lower in points.

here is the taco soup recipe:

1lb ground turkey
1 onion chopped
1 can chili beans
1 can black beans
1 small can baked beans (onion flavor)
1 large can diced tomatoes
1 can corn
1 packet ranch dressing mix
1 packet taco seasoning

in large pot brown onions and add ground turkey. once turkey is browned all all canned ingredients. Do not drain (makes the broth). stir together. Add both packets of seasoning...let simmer for 30 minutes.

i just ate my lunch and thought i'd give another idea for a low point meal.

birdseye has bagged frozen veggies that you microwave in the bag and they come out steamed. i think they call them Steamfresh. anyway...i had that, Broccoli and cauliflower mix, with 1/4 cup of cheese melted on top. 2pts.

another tip....if you have a can of something, or a bag of something that gives you the serving portion (say 1 cup) and then it says how many servings...double check. the veggies i just had said serving size 1 cup, about 3.5 servings. well, i measured it out and there was just over 2 cups of veggies in there, not 3.5 cups. just another way to save points

Lauren- Thanks for all the great ideas.

Tammy- DH loves that 0 point soup. He always asks me to make it. It goes nice with a sandwich for something extra for free (free is what I call 0 point food items. LOL). Especially with the chilly weather coming soon.

My husband is going to be doing WW with us. He said he got all my baby weight!!

I haven't tried this one yet but I thought it looked good. I might make it next week.

Lemon-Garlic Roast Chicken -- 6 pts
Recipe By : WW cookbook, Take Out Tonight
Serving Size : 4 Preparation Time :0:00
Categories :

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1/4 cup fresh lemon juice
1 1/2 tablespoons extra virgin olive oil -- divided
3 cloves garlic -- minced
1 teaspoon oregano
1/2 teaspoon marjoram
3/4 teaspoon salt -- divided
1/4 teaspoon freshly ground pepper
4 skinless bone-in chicken breast halves -- (I'm sure it would be fine with boneless too)
1 pound small red potatoes -- quartered
1/2 cup water

1. Preheat oven to 425 F

2. Combine the lemon juice, 1 T. of the oil, the garlic, oregano, marjoram, 1/2 tsp of salt and 1/8 tsp. pepper in a large bowl (I used a Ziploc). Add the chicken, tossing well to coat and marinate 20 minutes (I marinated for 3 hours but I didn't plan that!!)

3. Meanwhile, combine the remaining 1/2 T. oil, 1/4 tsp salt and 1/8 tsp pepper in a medium bowl. Add the potatoes and toss well to coat. Place a wire rack in the center of a large roasting pan. Arrange the potatoes around the rack and roast 20 minutes.

4. Remove the chicken from the marinade, reserve marinade. Remove the potatoes from the oven and place the chicken on the wire rack. Add the water to the reserved marinade and pour over the chicken and potatoes. Roast chicken and potatoes 20 minutes, baste with the pan juices. Return the pan to the oven and roast until the internal temperature is 170 F. (I didn't need the last 20 minutes, my chicken pieces were done. The potatoes were done, too, since they were small.)

4 servings, 6 WW points per serving

tammi - that lemon garlic chicken looks good...gonna have to try that one!

here is an enchilada recipe that i made for dinner tonight. it was soooo easy to make! i substitued a little to make it less fattening and less caloric. i'll put the original recipe down and then put in ( ) what i used instead.

Cheesy Beef Enchiladas

1 enchilada = 6 pts

1 lb ground beef (1 lb ground turkey)
1 jar, 16 oz salsa
1 1/2 cups kraft shredded cheddar cheese (1 1/2 cups lowfat mexican cheese)
1 pkg flour tortillas ( flour tortilla, buritto size)

preheat oven to 350. brown meat in large sillet; drain. Return meat to skillet. Add 1/2 cup each of the salsa and cheese; mix well.

spread 1/2 cup of the remaining salsa onto bottom of 13 x 9 inch baking dish. Spoon 1/4 (i did 1/2 cup since i used bigger tortillas) cup of the meat mixture down center of each tortilla; roll up. Place tortillas, seam down, in baking dish. top with the remaining salsa and cheese.

bake 20 min. or until heated through.

one enchilada is soooooo filling....dh couldn't finish 2. all together using the buritto sized tortillas 5 enchilada's were made. we have 2 for leftovers....
