Arrow Touchdown Poke Cupcakes



Prep: 25 min Ready In: 3 hr 45 min Serves: 24
1 pkg. (2-layer size) white cake mix
1 cup boiling water
1 pkg. (85 g) JELL-O Jelly Powder, any flavour
3 cups thawed COOL WHIP Whipped Topping
1/4 cup decorating icing
1/4 cup chocolate sprinkles

PREHEAT oven to 350°F. Prepare cake batter as directed on package, using the egg white version. Spoon batter evenly into 24 paper-lined muffin cups, filling each cup half full. Bake as directed on package for cupcakes. Cool in pan 15 min. Pierce cupcakes with large fork at 1/2-inch intervals.

STIR boiling water into dry jelly powder in bowl at least 2 min. until completely dissolved. Spoon evenly over cupcakes. Refrigerate 3 hours.

FROST cupcakes with whipped topping. Draw footballs on cupcakes with decorating icing; decorate with sprinkles. Store in refrigerator.

Jazz It Up
Decorate cupcakes with the colours of your favourite football team.

Those are cute. Poke cakes are one of our family's favorites. We make a 9x13 though.

I was going to do this but cupcakes this weekend for my family and use icing to practice but my sister HATES jello, UGH! LOL

Yeah jello in a cake sounds terrible to me. Not sure why.

I am sure they are good. They sure look pretty. I guess I am just not a huge jello fan.

Laura~ It doesn't taste like it has Jello in it. Just REALLY good fruit flavor.

Laura~ I agree with Sarah - the jello doesn't turn to gelatin in the cake. It just makes the cake really moist and gives it a fruity flavor. Then the topping is usually cool whip. People make those cakes here ALL OF THE TIME during the summer. MIL made one last week with raspberry jello and put fresh raspberries on the top. It was SO good.

I totally agree, I have had these type of "poke" cakes before at a church function. They are very moist, but it does not set like jello does.
