I first had this at a very ritzy restaurant near us. It was so delicious, I had to try and recreate it. My husband hates salmon but absolutely LOVES this recipe!
Serves: 6 (Great as leftovers) 6 salmon fillets, fresh or thawed 1 Tbsp Olive Oil 3 Tbsp honey 3 Tbsp butter, melted 5 Tbsp Sweet&Hot mustard (I use Trader Joe's but any will do.) 1/2c Italian bread crumbs 1/2c finely chopped pecans 3 tsp fresh parsley, finely chopped pepper to taste (optional) 1 lemon, cut into 6 wedges 1/4 c grated parmesan 1 head(?) fresh spinach PRE-COOK: In a small bowl, combine and mix oil, honey, mustard, and butter. Dip salmon fillets to coat in mixture. Place fish in aluminum foil, pour remaining mixture over, refrigerate up to 4 hours. (NOTE: If short on time, you do not need to marinate in refrigerate. Can cook immediately.) COOKING: Preheat oven to 400. In small bowl, mix breadcrumbs, pecans, and parsley, pepper, and parmesan. (Tip: Use a lidded plastic container and shake for easy mixing.) Lay out the salmon on baking sheet. Coat both sides of salmon in dry mix. Pour remaining over top of salmon. Bake until salmon is cooked thoroughly, generally 10 minutes per inch of thickness. Optional: Last 2 minutes, sprinkle extra parmesan over top and broil. While salmon is cooking, wilt spinach by boiling in water. Spinach is done when wrinkled. Drain water, lay spinach on paper towel, and pat dry. Coat each leaf with parmesan and return to pot. TO SERVE: Place spinach on plate in small pile. Place salmon fillet on top of spinach. Garnish with sprig of parsley and slice of lemon. Serve immediately. |

Whole Wheat Pizza Dough
2 1/2 C whole wheat flour 1 1/2 C white flour (but you can use all WW flour, it's just a little more 'thick') 2 pkg of rapid rise yeast (they make yeast specifically for WW flour. Your store might carry it) 3/4 C olive oil 1 1/4 C water pinch of salt and sugar/honey (to taste) Combine 1/4 C warm water with yeast and let sit for 4 minutes Pre-heat oven to 400 degrees Mix whole wheat flour and white flour, 1 C of water, 3/4 c olive oil, yeast mixture and salt/sugar/honey. Mix well and the let sit for 10-15 minutes You can cut it in half and make 2 pizzas from one batch of dough. roll out and cook just pizza dough for 10 minutes. Take out an dspread piizza sauce and toppings. Bake for another 10-12 minutes. |

I made that for dinner tonight and LOVED it. Dh did too, it was super easy to make and was really good. I made it with turkey, and only used 3 cups instead of four. |
