Fruit stuffed Brie

OK.... Get a package of Pillsbury crescent rolls. Take about half of the triangles, spread them out with a rolling pin (make sure the seams are sealed). Make sure that it is big enough to completely wrap the brie.
Get a wheel of brie. Slice it in half cross ways so that you have two thin wheels. Put one of the wheels in the center of the pastry dough. Spread preserves on one half - what ever kind of preserves you want. I think I used raspberry. You can add chopped nuts too if you want. Place the other wheel on top.
Wrap the pastry completely around the stuffed wheel. Bake at 350 degrees for about 15 - 20 minutes - I think (until pastry is golden brown).
I don't remember if I greased my baking dish first. You might want to put the dough on a greased piece of waxed paper so that after you bake it, you can flip it over onto a serving plate.
Serve with thin slices of french bread and fruit.I basically improvise as I go along.

Here's something I made on Thanksgiving that was just awesome! I added a couple dashes of hot sauce as well.

Scalloped Corn:

1 (14 3/4 ounce) can cream-style corn
2 eggs
1/2 cup crushed saltine crackers (about 15)
1/4 cup butter or margarine, melted
1/4 cup evaporated milk
1 small green bell pepper, chopped (seeded and chopped)
1 celery, diced
1 small onion, chopped
1 cup corn niblets, drained
3 teaspoons sugar
seasoning salt (to taste, or use white salt)
pepper (to taste)
1 cup cheddar cheese, grated (more for top of casserole)

Cook at 350 in an uncovered buttered casserole for 30-35 minutes. You can pull it out and throw some more cheese on top and cook an additional 3-5 minutes. It is SO good. Either that, or the wine made everything taste SO good.

I also made this cake and it was great too, though didn't make the icing, just used whipped cream and vanilla ice cream to accompany. It's a bit complicated because you have to use three bowls, but it is really good. And especially good when you put it in the fridge and eat it for breakfast the next morning!

super easy and super yummy Mexican cornbread recipe:

1. Cook 1-2lbs ground beef and add taco seasoning mix according to directions on packet.

2. Mix up batter for cornbread, either from a box or jiffy. If you like it spicy add some green chiles or jalapenos.

3. Pour half the cornbread batter into a greased casserole dish, then pour the taco meat on top, and sprinkle with grated cheese. Then pour the rest of the cornbread batter on top of that and bake in the oven according to the cornbread directions.
