"Not So Swedish Meatballs"
I got this recipe out of a series of books I've been reading that contain recipes, too. This is from Sugar Cookie Murder by Joanne Fluke.
I changed it some b/c it was way too much.

1 2.5lb bag frozen meatballs (I used Wal-Mart brand and it had ~80 meatballs)
3 family-sized cans c. of mush. soup
1 can fat-free evaporated milk.
1 diced onion or some of the frozen seasoning blend w/ onion, pepper, celery, etc. (I used a/b a cup of that)
Pepper
Season Salt
Onion Powder

Mix up everything in the crock pot and then put the meatballs in and mix them up. Turn on low for 6-7 hours (I didn't start it that early so I cooked it on High for 2 hours, then turned it to low for a/b 2 hours).
Serve over rice, fettuccini, or egg noodles (I did rice).

One serving (6 meatballs + a/b 1/2 cup of sauce) is a/b 11 points.

DH thought this was the greatest thing ever and ate a/b 16 meatballs. I ate 6 but I could have easily eaten 10. I was able freeze enough for 3 more meals.
Total cost ~$9.00

Kelly - that sounds really good!!

Well I experimented and came up with the bean/corn salad that's turning out to be a great snack while at work with a ton of protein.

1 can garbanzo beans
1 can black eye peas
1 can corn
1 can kidney beans
1 chopped green bellpepper
1 chopped medium red onion
fresh cilantro
1 jar of olive oil vinaigrette salad dressing

Drain the beans (and rinse them off) and mix everything together with some chopped cilantro.

Here's a recipe for Blueberry Banana Oatmeal Muffins
I adapted it from a recipe called "Healthy Blueberry Muffins" from www.healthy-eating-made-easy.com

Sift together:
1 1/2 cups flour
1 cup "Oatmeal Flour" (Grind oatmeal in coffee grinder/food processor until it looks like flour)
2 tsp. baking powder
1/2 tsp. salt.
1/2 tsp. cinammon

Stir 3/4 cup brown sugar into flour mixture

Puree in blender/food processor:
2 ripe bananas
Then add and puree again
2 1/2 TBSP butter
2 1/2 TBSP oil
2 eggs
1 tsp. vanilla

Pour that into the flour mixture and add a/b 1/2 cup milk.
Mix together, stir in a cup or so of blueberries.
Bake in muffin tins at 375 for 25 minutes. Makes 14-15 muffins. Each one is a/b 2 pts WW.

(If you're going to make these, it's kind of a lot of trouble so just double the recipe and freeze half)

They don't taste cakey like bakery muffins, but I enjoy them and know they are good for me. I would be glad to give this to Hannah for breakfast or a snack when she is old enough to eat food.

EDIT: I think you could add another 1/2 to 3/4 cup of milk to this and make pancakes or waffles.

If you make these muffins, freeze whatever you will not eat w/in 3-4 days or they start to taste like feet.

Kelly I will be trying this out thanks! I made blueberry muffins a few days ago and do mine similar, I use less sugar than the recipe calls for but add a nice sprinking of brown sugar on the top before baking, mmmmmmmmmmmmmm

I saw this thread and thought I'd add my favorite recipe!
Stuffed Green Peppers:
3 green peppers
1/2 onion
1 lb hamburger meat
1 can spaghetti sauce (I like Hunts Chunky Vegetable)
Two cups of instant rice

To Cook:
I cut up one green pepper and put in pan with the 1/2 onion.
The other two green peppers I cut the tops off and take out the seeds. I then cut up whatever is left from the tops. I cook the hamburger meat with or without the green peppers and onions. The two green peppers with the tops cut off are put in a bowl with water and put in the micro for 7 minutes to soften then up. Cook the rice. Combine the sauce, meat, onion, and sliced green peppers. I only stuff two peppers because I like the filling more. Stuff the peppers and I fill the container with the rest of the rice. Sprinkle with bread crumbs (good without too!) and place in oven at 350 for 45 minutes.

Tammy - I make a similar dish and DH didn't eat the peppers, plus they were expensive so I just make the filling and bake it in an 8x8 glass pan.

Amber I am sure I do......what sort of things do you want to cook? Casseroles? to grill or in the crockpot?? I made the Mt Dew cake again lastnight and dh was all smiles when he found out.

Jess's Brownie Recipe!!

These are AWESOME, we make them everyweek pretty much Ive made them 6 times so far

ksh has even made them a bit different & used strawberry cake mix

Pina Colada Cake

1 white cake mix
1 can Eagle Brand Condensed Milk
1 can Coco Lopez Cream of Coconut
1 tub cool whip

Bake cake according to package. Use a straw to poke holes every inch or so in the cake. Combine condensed milk and cream of coconut and pour over cake/into holes and allow to cool. When cool top with cool whip. My family loves this cake!
