Does anyone have any slow cooker recipes? I finally bought a slow cooker (crock pot) and now I'm at a loss as far as what to cook.

my favorite salsa...

1 fresh pineapple , chopped
1/2 small purple onion
1/4 cup cilantro chopped ( more if you like it)
2 serrano peepers seeded and chopped
zest of and juice of one lime ( i like to juice two limes)
one red bell pepper chopped
tabasco sauce
salt to taste

if the pineapple is not very sweet, sometimes i add a couple of tablespoons of sugar...i know its got the pineapple thing going on but this is so good...its always better the next day.


favorite pasta salad
mini penne pasta cooked , drained and chilled
cucumber chopped
small cherry tomatoes, halved
half purple onion
can of black olives (even better if you can get them form the olive bar in the deli)
avacado, chopped (if you are making ahead of time, dont chop until ready to serve)
small red bell pepper
small container fresh mozerella cheese they come in little balls, about the size of cherry tomatoes, i half them
bottle of your fave italian dressing

chop up all the veggies and cheese ( except avacado )
salt and pepper the chopped veggie (fresh cracked pepper and sea salt if you have it) and let them and let them juice up a bit about 15 minutes, toss veggies with cooked, cooled pasta
add about a 1/4 bottle of dressing...i dont really measure things, so it may take a little more or less
Chill for about and hour add the avacado right before serving.

Thanks Lynn. That salsa recipe sounds good too. I was hoping for a slow cooker recipe that someone has already tried. I got one off the internet and tried it. Oh, it was terrible .

I have some country style ribs that I would like to do something with, or if anyone has any other slow cooker recipes.

Crockpot sirloin tips
1 pkg sirloin tips
2 tbsp Worcestershire sauce
1 clove garlic, smashed
Cut up sirloin into bite size pieces. Add all ingredients to crockpot. Cook 8 hrs on low or 4 hours on high.

Baked Beef Rigatoni
preheat oven to 350 degrees F. Cook 1 lb. beef in non-stick pan until cooked through. Drain well. Boil 4 cups of rigatoni according to pkg directions. Combine beef, rigatoni, 4 cups tomato sauce & 1 cup mozzrella cheese (shredded). Spray a bakingdish with cooking spray. Add the mixture. Top with 1/2 to 3/4 cup mozzarella cheese (your preference). Top with 1/4 cup fresh parmesan cheese grated. Bake for 20 minutes.

Frozen Pizza
Buy a frozen pizza & cook it . . . Just kidding!

Macaroni & cheese, and...
White corn on the cobb.

Not the greatest meal in the world but DD and DH loved it.

Salad dressing.

A friend of mine taught me this recipe last summer and Ive been an addict ever since

1 Tsp brown sugar
1 Garlic clove (crushed)
Lemon juice
Extra Virgin Olive Oil

Put in enough lemon juice to disolve the sugar and then as much oil as you like (I like lots!) and drizzle over a green salad. I like to add a sweet element to my salads like grapes or kiwi and I also LOVE fresh rocket and spinach leaves... mmmm.

Party Melon

1 Large Water Melon
1 Bottle of Bubbly (cold)

Slice the bottom off the melon so than it can stand freely (but not too much or you'll spring a leak!) then cut the top off and scoop out the inside. Get rid of the seeds but keep the pulp. Add the champers into the scooped out melon and then mix in the pulp. You can then either use a laddle and fill glasses or, as we like to do, pass the melon around and all share in the fun!

A tasty crockpot chicken barbecue

INGREDIENTS:
2 boneless, skinless chicken breasts
1 1/2 cups tomato ketchup
3 tablespoons brown sugar
1 tablespoon Worcestershire sauce
1 tablespoon soy sauce
1 tablespoon cider vinegar
1 teaspoon ground red hot pepper flakes, or to taste
1/2 teaspoon garlic powder

PREPARATION:
Combine all ingredients for the sauce in the slow cooker. Add the chicken, try to coat it well with the sauce.
Cook on high 3-4 hours, or until chicken is fully cooked all the way through. Then shred or cut up the chicken, and replace it in the Barbecue sauce in the pot; mix it all up so all the pieces are coated.


I used several chicken breast and doubled the recipe. It was really, really good. Oh, I also left out the hot pepper flakes.

I had this at a church luncheon and I could not stop eating it! I had three servings!

Macaroni Grill Penne Rustica

Gratinata Sauce

2 Tbsp Butter
2 Tbsp Chopped Garlic
1 Tbsp Dijon Mustard
1 tsp Salt
1 tsp Chopped Rosemary
1 Cup Marsala Wine
1/4 tsp Cayenne Pepper
4 Cups Heavy Cream (original recipe calls for 8 cups)
Can add mushrooms if you like

Saute butter, garlic & rosemary until garlic begins to brown. Add wine and reduce by 1/3. Add remaining ingredients and reduce by 1/2 of original volume. Set aside.

Penne Rustica

1 oz Pancetta or Bacon
18 Shrimp, peeled & deveined
12 oz Grilled Chicken Breast, sliced
4 1/2 Cups of Gratinata Sauce
16 oz Penne Pasta, precooked (original recipe calls for 48 oz)
3 Tbsp Pimentos
6 oz Butter
1 Tbsp Chopped Shallots
1 Pinch of Salt & Pepper
1 Cup Parmesan Cheese
1/2 tsp Paprika
6 Sprigs of Fresh Rosemary

Saute pancetta until it begins to brown. Add butter, shallots, and shrimp. Cook until shrimp are evenly pink but still translucent. Add chicken, salt, pepper and mix thoroughly. Add gratinata sauce and 1/2 cup of parmesan cheese and simmer until sauce thickens. In a large bowl, combine shrimp and chicken mixture with precooked pasta. Place this mixture into single serving dishes or one large casserole dish. Top with remaining cheese and pimentos and sprinkle with paprika. Bake at 475 degrees for 10-15 minutes. Remove and garnish with fresh rosemary sprig. Serves 6.

Dump Cake

1 lg can crushed pineapple
1 lg can cherry pie filing 20 oz. or bigger
1 yellow cake mix.
2 stick butter
coconut
chopped pecans

In a 9 x13 baking pan/dish spread pineapple with juice. On top of that spread cherry pie filing. Sprinkle dry cake mix on top. Melt 2 sitcks butter and pour evely on top. Bake at 325 for 30 minutes. Then sprinkle coconut and nuts, bake until light brown.

These are from the baby is here section - recipe thread, im putting them here also


Hamburg Corn Bake Casserole

1.5 lbs ground beef
1 cup onion
(cook in frying pan)

Then add:
1 can corn ( drained)
1 can cream of mushroom soup
1 can chicken soup
1 cup sour cream
salt & pepper to taste

Stir in 3 cups macaroni ( cooked and drained). Turn into a casserole dish and top with: 1 cup bread crumbs and 2 tbs melted butter, sprinkling over top of casserole, cook in oven @ 350 for 40-50 min or until colden brown

8-10 servings

Baked Hashbrowns

1 bag of frozen hashbrowns
1 cup sour cream
1/2 cup melted butter
2 cans cream of mushroom soup
1 cup of shreadded cheddar cheese
1/2 diced onion

Mix all together and place in shallow casserole dish( for best casserole). Then sprinkle grated parmasan cheeseon top. You could put in a little bit of cooked bacon ( I've done this, yum)

Bake @ 350 for 1.5 hours until golden brown

10 + servings

Meatloaf

This is not a recipe, but I never have time during BF to get up and shut the oven off/ or even to check it. SO cook your fav meat loaf in the crock pot on low and forget it.



I have pulled a bunch of recipes that I think some of you have tried from our friend LISA that were posted in the EATING AND DIETING thread. So lisa thanks for the great recipes and everyone check these out below.. Thanks to a few others as well.


crockpot ( luvefrog)

Lisa

Sour Cream Potatoes

6-8 large potatoes boiled and cubed (I have microwaved)
1 8 oz container sour cream
2 cups shredded cheddar cheese
1 sm onion diced finely and heated in microwave for 5 minutes in tablespoon of butter.
1/2 stick butter melted

Grease large casserole and mix ingredients and bake at 350 degrees for 45 minutes.





Broccoli-Cheese Bake

2 pkg Frozen chopped Broccoli, cooked and drained
1 cup Minute rice, uncooked
1 small onion, chopped fine
1 can cream of chicken soup
1/2 cup milk
1/2 cup Cheez Whiz, softened
pinch of oregano.

Mix together all above ingreadients in a 9 x 9-inch baking dish which
has been sprayed with a non-stick cooking spray. Bake 350 degrees for 35 minute. 8 to 10 servings.


Chicken Ring

½ cup red bell pepper
½ cup fresh broccoli, chopped
¼ cup water chestnuts, drained and chopped
2 tablespoons onion chopped
1 can (5 ounces) chunk chicken (white), drained and flaked
2 packages (8 ounces each) refrigerated crescent rolls

Preheat over 350 degrees. Chop pepper, broccoli, water chestnuts and onion with food chopper.
Flake chicken with Pastry Blender. Combine all ingredients except crescent rolls in 2-qt. bowl.
Unroll crescent rolls and arrange triangles in a circle 15” baking stone with bases overlapping
in center points towards the outside. Scoop filling and tuck under base at center.
(Filling will not be completely covered.) Bake 25-30 minutes or until golden brown.
Cut with Pizza cutter, serve warm.

6 servings or 16 sample servings
370 calories and 21 grams of fat per serving.

Taco Ring

1 lb. ground beef
1 taco seasoning pack
2 tablespoons onion chopped
lettuce
tomato
sour cream
taco sauce
grated cheese
2 packages (8 ounces each) refrigerated crescent rolls


Brown beef, add onion and taco seasoning pack. Drain off grease. Unroll crescent rolls
and arrange triangles in a circle 15” baking stone with bases overlapping in
center points towards the outside. Scoop filling and tuck under base at center.
(Filling will not be completely covered.) Bake 25-30 minutes or until golden brown.
In the middle of ring put lettuce, tomatoes, cheese, and sour cream. Cut with Pizza cutter, serve warm.
I usually leave the lettuce, tomatoes, cheese and sour cream in their own bowls and serve them that way.
The other way is a prettier presentation.

Smoked Sausage Casserole

First you fry 6 to slices of bacon until crisp.
Put to the side, crumble when cool.
Put a layer of 3-4 lg potatoes slices thin and peeled.
Then slices carrotts, about 3 to 4 of them.
Cover and cook on Medium heat about 15 to 20 minutes.
While that is cooking slice 2-3 large onions (Optional)
After cooking 10 minutes add these.
Then slice smoked sausage into bite size pieces.
Add after 20 minutes is up.
Let cook arount 5 to 10 minutes.
When sausage is steamed add frozen chopped or florets of brocolli.
I use to boxes. Let cook about 5 minutes, long enough to steam.
Sprinkle bacon on top and serve.

I never stir it, and it does not stick or burn. The bacon grease is the secret.

Broccolli Salad

1 bunch fresh broccolli, chopped 1 cup shredded cheese
1 onion, chopped 8 slice bacon, cooked and crumbled

Dressing
½ cup mayo 2 Tablespoons vinegar
¼ cup sugar

Stir dressing until sugar is dissolved. Pour over the preceding ingredients. Toss and refrigerate overnight.


Pineapple-Cheese Casserole

1 (20 oz.) can pineapple chunks, drained (save ½ cup juice) 3 Tablespoons flour
½ cup sugar ¼ cup melted butter
1 cup grated cheese crushed Ritz crackers

Place pineapple chunks in a buttered casserole dish. Sprinkle cheese over pineapple.
Mix sugar and flour and add pineapple juice and 3 tablespoons of melted butter (margarine).
Pour sauce over pineapple and cheese. Top with crushed Ritz crackers and pour remaining butter on top.

Bake 350 degrees until it bubbles well.


My Mom's recipe, love it on a cold day!

Chicken Stew

1 large hen, boiled, deboned and cut into small bite size pieces
1/2 lb. butter
1/4 bottle catsup
1 small jar mustard
2 large Irish potatoes
3/4/ (no. 2) can corn drained
2 (No. 2) cans tomato juice
1 onion to taste
Salt, pepper and vinegar to taste

Peel and cube potatoes and onion. Mix all ingredients and boil until thick.

Serve over rice or bread.


Taco Soup

1 lb hambruger browned, add taco seasoning pack with browning.

After browning add:

3 can diced tomatoes
1 can Rotel tomatoes
1 can kidney beans (drained)
1 can pinto beans
1 can whole cornel corn (drained)

Cook until boiling and let simmer for a short while.

Serve with med. Cheddar Cheese grated and sour cream.

Good on a cold night.



Broccoli Soup

2 boxes frozen broccoli (chopped)
1 can chicken broth
2 can cream of chicken
2 can evaporated milk
1/2 stick butter
1 cup grated cheese.

Medium heat cook brocolli in chick broth until tender.
Add cream of chicken and cook until dissolved. Add butter, cheese and milk.
Do not continue to boil once the milk has been added.
(Cooked ehck cut into chunks may be added.)


Poor Man's Steak

1 lb hamburger
2 to 3 regular size onions sliced into rings
6 to 8 potatoes peeled and cut into slices
1 can cream of mushroom


I a baking pay put a layer of 1/2 of the potatoes, layer of 1/2 of the onions,
crumble 1/2 of hamburger and spread 1/2 of the can of cream of mushroom.
Then put remain potatoes, onions, hamburger and soup. You can top with cheese if you like.
Cover with foil and bake at 350 degrees for 45 minutes to one hour.
Serve with a salad or your choice of vegetable.



Rebecca ( rac)

Loaded Baked Potato Soup:

2/3c margarine
2/3 c flour
7c (1/2 gal minus 1 c) milk (don't use skim milk)
4 large potatoes baked, cooled, peeled and cubed (use micro)
1 T dried chives or 1 bunch green onions
12 bacon strips cooked and crumbled
1 1/4 c shredded cheddar cheese
1c sour cream
3/4 t salt
1/2 t pepper

Melt margarine in large pot. Stir in flour until smooth. Add milk, stir until thickened.
Add potatoes and chives, bring to a boil, rdeuce heat and simmer for 10 mins. Add remaining ingredients.
Stir until cheese is melted. Serve immediately. Makes 8-10 servings.

I was just directed to this website on the FF boards, so I thought I would share. Lots of great recipes that are perfect for making and freezing before baby gets here so that afterwards all you have to worry about is popping them in the oven.
