Default Recipe Exchange

Since everyone seems to like the idea of sharing recipes, I thought this was the best place for it.

I'll start with my Sangria:

1 Bottle of red wine (Cabernet Sauvignon, Merlot, Rioja, Zinfandel, Shiraz)
· 1 Lemon cut into wedges
· 1 Orange cut into wedges
· 1 Lime cut into wedges
· 2 Tbsp sugar
· Splash of orange juice (I like to use the Dole blend juices with like pineapple or mango or something more fruity). I usually use more than a 'splash', too.
· 1 Cup of sliced strawberries or raspberries
· 1 Small can of diced pineapples (with juice)
· 4 Cups ginger ale
Pour wine into a pitcher or punch bolw and squeeze the juice wedges from the lemon, orange and lime into the wine. Toss in the fruit wedges (leaving out seeds if possible) and add sugar and orange juice. Chill overnight.
Add ginger ale and ice just before serving.

You can serve it right away, if you want but use chilled red wine and serve over lots of ice. However, remember that the best Sangrias are chilled around 24 hours in the frig. – so that the flavors can really marinate into each other.

Default Taco and Chicken Ring on baking stone

My family loves both of these, but espcially the taco ring. Enjoy!

Chicken Ring

½ cup red bell pepper
½ cup fresh broccoli, chopped
¼ cup water chestnuts, drained and chopped
2 tablespoons onion chopped
1 can (5 ounces) chunk chicken (white), drained and flaked
2 packages (8 ounces each) refrigerated crescent rolls

Preheat over 350 degrees. Chop pepper, broccoli, water chestnuts and onion with food chopper. Flake chicken with Pastry Blender. Combine all ingredients except crescent rolls in 2-qt. bowl. Unroll crescent rolls and arrange triangles in a circle 15” baking stone with bases overlapping in center points towards the outside. Scoop filling and tuck under base at center. (Filling will not be completely covered.) Bake 25-30 minutes or until golden brown. Cut with Pizza cutter, serve warm.

Taco Ring

1 lb. ground beef
1 taco seasoning pack
2 tablespoons onion chopped
lettuce
tomato
sour cream
taco sauce
grated cheese
2 packages (8 ounces each) refrigerated crescent rolls

Brown beef, add onion and taco seasoning pack. Drain off grease. Unroll crescent rolls and arrange triangles in a circle 15” baking stone with bases overlapping in center points towards the outside. Scoop filling and tuck under base at center. (Filling will not be completely covered.) Bake 25-30 minutes or until golden brown. In the middle of ring put lettuce, tomatoes, cheese, and sour cream. Cut with Pizza cutter, serve warm. I usually leave the lettuce, tomatoes, cheese and sour cream in their own bowls and serve them that way. The other way is a prettier presentation.

Smoked Sausage Casserole

First you fry 6 to slices of bacon until crisp.
Put to the side, crumble when cool.
Put a layer of 3-4 lg potatoes slices thin and peeled.
Then slices carrotts, about 3 to 4 of them.
Cover and cook on Medium heat about 15 to 20 minutes.
While that is cooking slice 2-3 large onions (Optional)
After cooking 10 minutes add these.
Then slice smoked sausage into bite size pieces.
Add after 20 minutes is up.
Let cook arount 5 to 10 minutes.
When sausage is steamed add frozen chopped or florets of brocolli. I use to boxes. Let cook about 5 minutes, long enough to steam.
Sprinkle bacon on top and serve.

I never stir it, and it does not stick or burn. The bacon grease is the secret.

Forrest request this on occassion. He loves it!

Cheese Pie or as you call it Mac and Cheese

Cook your macroni, usually the big box.

I grate 8 oz. of medium cheddar cheese

2 eggs

2 cups milk

butter

salt and pepper to taste.

In baking dish put cooked macroni, add cheese and stir in. In milk add eggs, salt and pepper, blend well and pour on top. Add butter pats on top bake at 350 degrees until browning on top about 30 to 45 minutes. Don't want to overbake or it will be dry.

Zucchini-Honey Bread

Really yummy and a good way to sneak veggies to kids or a DH. Mine never knew there was zucchini in there

This makes 2 loafs...cut recipe in half for one.

3 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 tablespoon ground cinnamon
1 cup chopped pecans
2 cups shredded zucchini (about 1 large zucchini)
2 large eggs, lightly beaten
1.5 cups sugar
0.75 cups honey
1 cup vegetable oil
2 teaspoons vanilla extract

1) Combine first 6 ingredients in a large bowl, stirring well.
2) Combine zucchini and remaining 5 ingredients, stirring well. Add to flour mixture, stirring just until dry ingredients are moistened.
3) Spoon batter into 2 greased and floured 8.5 x 4.5 inch loafpans. Bake at 350 for 1 hour and 10 minutes or until a wooden pick inserted in center comes out clean. Cool in pans on wire racks 10 minutes; remove from pans, and cool loafs on wire racks.

**you can bake in 9x5 pans for 1 hour, but they won't be as tall.
