Arrow Crepes

Alyssa's new fav breakfast. She had one today with PB and Banana & Powdered sugar ontop!

Basic Crepes

( this recipe makes 4 crepes, measure 1/4 cup for each crepe into hot pan) - to adjust recipe use link at bottom of page and enter serving amount.)

INGREDIENTS
  • 1/2 cup all-purpose flour
  • 1 eggs
  • 1/4 cup milk
  • 1/4 cup water
  • 1/8 teaspoon salt
  • 1 tablespoon butter, melted
DIRECTIONS
  1. In a large mixing bowl, whisk together the flour and the eggs. Gradually add in the milk and water, stirring to combine. Add the salt and butter; beat until smooth.
  2. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each crepe. Tilt the pan with a circular motion so that the batter coats the surface evenly.
  3. Cook the crepe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn and cook the other side. Serve hot.

OMG, love crepes. I like chocolate crepes too. I remember really discovering crepes on a Carnival cruise year ago, where they had a midnight crepe buffet. I like the plain ones best, filled with cream cheese fruit filling. Let's see, if I was gonna make it, I'd beat cream cheese with some sugar, and beat in some fresh chopped strawberries, or ....oooh! Raspberries, maybe tossed in a little sugar and left to soften beforehand. Oh, yum. That sounds goooooood.

Somewhere along the line, the simple crepe acquired a reputation for complexity that belies its street-kiosk origins. The trick is the right pan -- shallow, heavy, and with a well-tempered iron or nonstick surface -- along with some trial runs, and a flip of the wrist.
