Betsy - I can't even believe that your insurance won't just pick up where you left off. Is there someone in your benefits department or the carrier themselves to talk to? I'm sure at this point you don't want to talk to anyone at all at least until you're feeling a little better. Just when you think there's light at the end of the tunnel.... {{HUGS}}

Betsy-That is complete BS that you have to go through all that again. Its not fair as you already have a diagnosis so lets continue moving on already. I'm so sorry as I know how much you hate dealing with doctors and all the red tape that seems to come with it.

I had a bit of a meltdown last night. For no reason I lost my mind while cooking dinner. I told DH to just let me yell for a few minutes, let me pissed and I'll be fine. I got pissed because I was cooking chicken in the oven (which I hate doing as I never get it right) and was getting pissed because it was taking forever and not getting done. So I was pissed that I felt like I ruined a perfectly good meal. Stupid I know and probably just raging hormones!

Heidi - I understand that! It comes on suddenly out of no where and you have no explaination for it. Then they look at you like you've lost it. I hope your chicken turned out okay afterall....

I got my final grade in Swedish Massage..... 97%! YAY!

Rebecca-It definitely comes out of no where. And no the chicken was not all that tastey. We aren't big fans of baked chicken anyways but I know its good for you so we try anyways.

Easy and good baked chicken, made up by me, called 'Italian Chicken': boneless skinless chicken breasts, put into ziplock bag(s) however many you need, and coat generously with italian dressing (get the good stuff, NOT the low fat thick kind). Marinate for as long as you can, up to overnight (I take mine out of the freezer and put it straight into the bags with the dressing, and let it thaw and marinate at the same time overnight and the next day). Now, preheat oven (I use the toaster oven for this actually) to about 350, dump the chicken, marinade and all into a dish, sprinkle with pepper and garlic powder, and then top with grated parmesan cheese. Now, bake the suckers, and don't mess with them. It should take around 45minutes to an hour depending on the size of the chicken and your oven (on the short end in the toaster oven -- I love my toaster oven. I'd starve without it). Once it's about that time and the chicken is looking done, it will start to brown a little, the marinade will have cooked down, etc, I poke a steak knife through the thickest part of the largest one to check doneness. It's good, it's juicy, and it LOOKS PRETTY.

I've also mixed up bar-b-q sauce, a touch of A-1, worchestershire, mustard, pepper, garlic powder, and made a little dressing to coat the chicken in, and cooked it the same way.

Toaster ovens are your friends, I'm telling ya. I use the actual broiler/drip pan from the toaster oven and cover it in foil when I do chicken (I can fit three good sized breasts in there and it will hold the juices and marinades), then just throw it all away.

One you get the hang of the timing for your oven or toaster oven to bake it through, it's a snap. No matter what you do to the chicken, it takes about the same amount of time to cook (unless it's in smaller pieces, or not thawed, of course).

But don't ask me about bone-in stuff. I am the chicken breast queen, but the only thing I know how to do with bone-in chicken is boil it to cook it and make the stock for chicken and dumplings.

Heidi - That's too bad about your dinner. You should have at least been able to enjoy it! I'm not big on 'baked chicken', either. Usually , we just grill. As long as it's not below 30 degrees or really windy, the grill is lit. I'm a big fan of chicken thighs. They have better taste than breasts and they're juicier - and they cook faster! I buy the boneless, skinless Perdue thighs at Sam's Club then sprinkle them with some McCormick 'Steakhouse Grinders'. Dh loves them and they're healthy!

Rebecca-I agree about the thighs and love those much better. I think we'll just stick to those unless we can use the grill!

Steph-Thanks....DH said the same thing about I should of just used a marinade instead of trying to stuff them with stuff that would make it taste good.

Ohhh...to me, stuffing chicken is hard. In theory, I know how, but I've never been brave enough to try it. Fortunately, I can usually find stuffed chicken and stuffed fish at the grocery stores around me, not too pricey. I even found these cool little flank steak roll ups stuffed with spinach and some cheese and spices, they looked like great big pinwheels, like slices of those jelly-roll thingies? Pretty yummy. I like that stuff. I know it's costlier, so I don't buy stuff like that for more than once a week usually, but it's a nice departure from the norm.

Auuuugh, chicken with bones makes me afraid. I'm the fried chicken queen too, but I just can't do it with bone-in chicken. Truly, the only thing I can do well with bone-in chicken is boil it til it's done and debone it.

Not that any of this matters anymore. Not like I cook for anyone anymore. I'm even getting bored cooking for myself now.

Last night, I had a big pile of cocktail shrimp and a few slices of cheese for dinner. And a hostess cupcake.

The night before, I had stuffed fish and spinach, so that was okay. It just seemed like to much effort, even though they were both frozen. I had to *gasp* open the fish package and bake it in the toaster oven, and *omg* put some of the spinach in a tupperware with s/p and butter and micro it for a couple minutes.

The night before that, I had four glasses of wine, a valium, and two hostess cupcakes.

Heidi - I have had those meltdowns! Stuffing chicken just plain sucks. I make Chicken Kiev and each time I make it I wonder why the hell I am putting myself through this! The only good thing is that it feels really good to pound the crap out of the chicken with my rolling pin!!!! Each time I make it I swear it's the last time! Do you still have that uncomfortable feeling?

Karyn~ I get March 21 and 24 off, so it makes a 4 day weekend for Easter, which I LOVE! But my actual spring break is in April, which is when dh and I will go on our cruise. Thanks for asking!

First I want to apologize for my outburst yesterday Not even meditating calmed me down yesterday I was so P'O'd.

But don't you worry , my PCP, the insurance, the medical group and the new OB heard my wrath. I went off, blah blah blah to every person who picked up the phone. How I had 12 shots a year to get pregnant and they have completely wasted one of my shots, that I was almost 37 years old, that I'm not some newbie, that I've been monitoring my fertility for 30 months and I deserve to be treated with some respect and given the specialist I want. After 9 calls - that totalled 124 minutes. yes I kept track purely for purposes of bitching. I got half of what i wanted. Instead of an OB (oh I also told the OB I had no desire to sit in a room with a bunch of pregnant woman) anyway....I got sent to a "fertility" specialist. Not an RE. Since my insurance doesn't cover Gift, Zift or invitro they are not referring me to an RE. But I got sent to someone who can do inseminations, and do the whole menu of ovulation stimulation drugs. Which is irritating but suits me just fine, I have no problem going to see someone I know more than. So my insurance covers 50% of 6 IUI's. So I'm committed to 6 IUI"s so my plan is to have them all done by September. Take the holiday season off and figure out the rest in 2009. My first appt is March 13th, which is scheduled to be CD1, so wear white that day, cause hopefully that will be the start of IUI cycle # 5.

Oh Betsy, im glad you got at least some of the things you wanted, i mean i admire you for standing up to all those people. 124 min worth of phone calls!! after 30 min i would´ve lost my patience. I just read the last 2 pages of posts, and was worried about you and your stupid insurance, but im happy to see your last post.
Ihope you can start with IUI#5 soon. You are so brave, just having an injects cycle drives me crazy, i would totally lose my mind with anything else.

Heidi - who doesn´t have a breakdown during the 2ww, in here? we all do. Dont feel bad.
