tammi - that lemon garlic chicken looks good...gonna have to try that one!

here is an enchilada recipe that i made for dinner tonight. it was soooo easy to make! i substitued a little to make it less fattening and less caloric. i'll put the original recipe down and then put in ( ) what i used instead.

Cheesy Beef Enchiladas

1 enchilada = 6 pts

1 lb ground beef (1 lb ground turkey)
1 jar, 16 oz salsa
1 1/2 cups kraft shredded cheddar cheese (1 1/2 cups lowfat mexican cheese)
1 pkg flour tortillas ( flour tortilla, buritto size)

preheat oven to 350. brown meat in large sillet; drain. Return meat to skillet. Add 1/2 cup each of the salsa and cheese; mix well.

spread 1/2 cup of the remaining salsa onto bottom of 13 x 9 inch baking dish. Spoon 1/4 (i did 1/2 cup since i used bigger tortillas) cup of the meat mixture down center of each tortilla; roll up. Place tortillas, seam down, in baking dish. top with the remaining salsa and cheese.

bake 20 min. or until heated through.

one enchilada is soooooo filling....dh couldn't finish 2. all together using the buritto sized tortillas 5 enchilada's were made. we have 2 for leftovers....
