Crunchy Ranch Chicken
Servings 4 or 5
4 points per serving

1/3 cup Corn Flake crumbs
1/4 cup reduced fat Parmesan Cheese
1 packet Hidden Valley Ranch Dressing Mix
4 boneless, skinless chicken breast halves

Preheat oven to 350°F. Spray a 9x13 inch pan with nonstick cooking spray. Combine corn flake crumbs, cheese and dressing mix. Spray chicken with butter flavored Pam, then roll in corn flake mixture to coat. Place chicken in prepared pan and bake uncovered for 45 minutes or until done.

Cheesy Potatoes

Servings: 8

3 cups frozen hash brown potatoes
10 3/4 oz Campbell's (U.S.) 98% Fat-Free Cream Of Chicken Soup
5 oz Kraft 2% Milk Reduced Fat Natural Cheese Sharp Cheddar Cheese
1 1/2 tsp onion powder
1/4 tsp black pepper
1/2 cup reduced-fat sour cream

Preheat oven to 350. Spray a 9x9 baking dish with Pam. Mix all ingredients together and place into baking dish. Bake 45 minutes.

Note: I cover with foil to keep it moist in the oven. Then I uncover it with 15 minutes left to go and let it brown on top.
