One of my old standby favorites that I made up when I was a teenager in my first apartment. I used to do this in a frying pan, but then I realized it’s much more tender in the oven in a covered dish.
-A couple of boneless skinless chicken breasts
-Optional: sear over high heat first to brown the outside slightly, onlyf desired)
-Pour half a bottle (or however much) Italian dressing.
-Optional: sprinkle the top of each breast with grated parmesan and parsley flakes.
-Bake at 350 for about 1hr.
This is a really simple dish that makes a nice colorful presentation (like when mom-in-law visits the new baby? LOL!). Really good flavor.
