Zucchini-Honey Bread

Really yummy and a good way to sneak veggies to kids or a DH. Mine never knew there was zucchini in there

This makes 2 loafs...cut recipe in half for one.

3 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 tablespoon ground cinnamon
1 cup chopped pecans
2 cups shredded zucchini (about 1 large zucchini)
2 large eggs, lightly beaten
1.5 cups sugar
0.75 cups honey
1 cup vegetable oil
2 teaspoons vanilla extract

1) Combine first 6 ingredients in a large bowl, stirring well.
2) Combine zucchini and remaining 5 ingredients, stirring well. Add to flour mixture, stirring just until dry ingredients are moistened.
3) Spoon batter into 2 greased and floured 8.5 x 4.5 inch loafpans. Bake at 350 for 1 hour and 10 minutes or until a wooden pick inserted in center comes out clean. Cool in pans on wire racks 10 minutes; remove from pans, and cool loafs on wire racks.

**you can bake in 9x5 pans for 1 hour, but they won't be as tall.
