Broccolli Salad
1 bunch fresh broccolli, chopped 1 cup shredded cheese
1 onion, chopped 8 slice bacon, cooked and crumbled
Dressing
½ cup mayo 2 Tablespoons vinegar
¼ cup sugar
Stir dressing until sugar is dissolved. Pour over the preceding ingredients. Toss and refrigerate overnight.
Pineapple-Cheese Casserole
1 (20 oz.) can pineapple chunks, drained (save ½ cup juice) 3 Tablespoons flour
½ cup sugar ¼ cup melted butter
1 cup grated cheese crushed Ritz crackers
Place pineapple chunks in a buttered casserole dish. Sprinkle cheese over pineapple. Mix sugar and flour and add pineapple juice and 3 tablespoons of melted butter (margarine). Pour sauce over pineapple and cheese. Top with crushed Ritz crackers and pour remaining butter on top.
Bake 350 degrees until it bubbles well.
