Claire ~ I often mix ground beef up with seasonings (s&p, garlic powder, A-1, bbq sauce, worchestershire sauce, meat seasoning) and make patties, then broil them in the toaster oven (toaster oven = my hero) so the excess grease drips off.
I serve most things with a BIG pile of green veggies. I mostly only make spinach, broccoli, asparagus spears, snap peas, brussel sprouts, or french style green beans - I use frozen and light steam and season it. I'd never be successful with fresh veggies. Frozen works really well for me.
As for carbs/starches I dunno; it's one of the things I cut out. I make packet pasta or potatoes, or boil-in-bag rice, or like right now I have a box of frozen twice baked potatoes in individual wrappers. I have to give him something like that, but I don't pay any attention to the caloric content of that stuff cause I don't eat it, or will only have a couple small bites. But I don't know -- maybe look into whole grain pastas? Baked potatoes?
